My Favorite Bran Muffins

    1 1/2 cups wheat bran
    1 1/2 cups all purpose flour
    2 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    1 large egg
    1 1/2 cups plain low-fat yogurt
    1/3 cup canola oil
    1/3 cup fancy molasses
    1 cup dark raisins or dried cranberries
    3/4 cup chopped pecans, toasted
    1/4 cup flax seeds

In a large bowl, whisk together bran, flour, baking soda, baking powder and salt. In a separate smaller bowl, whisk together the egg, yogurt, canola oil and molasses. Pour over dry ingredients, scraping out bowl with rubber spatula. Sprinkle with raisins, pecans and flax seeds. With a wooden spoon, stir wet and dry ingredients together just until all dry ingredients are moistened. Spoon into oiled or paper-lined muffin tins, filling to top. Bake in the center of a 375°F oven for about 20 minutes or until muffins spring back when lightly touched. Let cool in pan for about 3 minute; remove and either let cool on rack or serve in a serviette-lined basket.
