Banana Cranberry Bread

    2 eggs
    3/4 cup granulated sugar
    1/2 cup canola oil
    1 cup well-mashed, overripe bananas (about 3 medium)
    1/2 cup plain yogurt
    1 tsp vanilla
    2 cups all purpose flour
    1 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    1 cup dried cranberries

In large bowl, combine eggs, sugar, canola oil, bananas, yogurt, and vanilla; whisk until thoroughly blended. In small bowl, mix together flour, baking powder, baking soda, and salt; stir in dried cranberries. Add to egg mixture; stir until combined. Pour into greased and floured 9x5" loaf pan. Bake at 350°F for 50-60 minutes or until tester comes out clean. Let cool in pan 5 minutes; turn out onto rack to cool completely.
