Bran Muffins

    1 1/2 cups wheat bran
    1 1/2 all purpose flour
    2 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    1 large egg
    1 1/2 cups plain low-fat yogurt
    1/3 cup canola oil
    1/3 fancy molasses
    1 cup dark raisins or dried cranberries
    3/4 cup chopped pecans, toasted
    1/4 cup flax seed

In large bowl, whisk together bran, flour, baking soda, baking powder, and salt. In a separate bowl, whisk together egg, yogurt, canola oil, and molasses; pour over dry ingredients and mix. Sprinkle with raisins, pecans, and flax seeds; mix together. Spoon into oiled or paper-lined muffin tins; filling to top. Bake at 375°F for 20 minutes. Let cool in pan 3 minutes; remove and let cool on rack.
